Chilli Prawn Spaghetti

In the hotter months, I tend to stray away from meat and opt for seafood or vegetarian options instead. I always find myself feeling sluggish after having meat heavy meals in the summer. So my Chilli Prawn Spaghetti recipe is genuinely a go to in this heat! This recipe easily serves two people.





Ingredients:

Wholegrain Spaghetti *

1/2 White Onion

3 Garlic Cloves

Fresh Parsley

1 can of Italian chopped tomatoes

Uncooked King Prawns

Grated Parmesan


* Substitute for white spaghetti if preferred, or even linguine.


Method:

  • Steam one red chilli over a pan of boiling water. Ensure the chilli is pierced with a sharp knife a few times to prevent from exploding.

  • Once the chilli has been steaming for approximately 10 minutes, bring a saucepan of water to the boil. Add the spaghetti and reduce the heat.

  • Mince the garlic cloves and finely dice half a white onion. Finely chop the stalks of your fresh parsley (the leaves will be used later). Add these into a pan with a swig of Extra Virgin Olive Oil and saute on a low heat until the onions become translucent.

  • Add the prawns and, using tongs, turn them over when one side becomes pink. This process will take approximately 1-2 minutes on each side depending on the size of your prawns.

  • Once the prawns are cooked, take them out and put them into a bowl. You do not want to overcook prawns - overcooking them creates an unpleasant rubbery texture.

  • Add the tinned tomatoes and season with sea salt and cracked black pepper. Add some smoked paprika and a little cayenne pepper if you want the pasta to be spicier. Finely chop the parsley leaves and mix it into the pan.

  • Turn off the saucepan in which the chilli is steaming. Make an incision in the chilli length-ways and open it up. Scrape out the seeds and remove the skin off of the chilli. Dice the remaining fruit of the chilli and add into the chopped tomatoes.

  • Allow to simmer and, when the spaghetti is almost ready, add the prawns. Add some pasta water if you find that the tomatoes are reducing too much.

  • Finally, add the cooked, drained spaghetti into the mixture. Plate up, and top with thinly sliced chillies and grated parmesan.
