Vegetarian Chilli Recipe

This vegetarian chilli is the perfect meal for when you're in need of a hearty, healthy and filling boost. You can have it with rice, pasta, or even on top of some nachos. And you can try serving it up with my homemade guacamole and some sour cream.

Ingredients
1 red onion
2 sticks of celery
2 carrots
Mushrooms
Courgettes
5 cloves of garlic
2 cans of chopped tomatoes
1 tin of kidney beans
Fresh coriander
Sweetcorn
Spinich
Smoked Paprika
Cayenne Pepper
Method
Finely chop red onions, carrots, celery, and garlic and sweat for fifteen minutes.
One they have softened, add in some diced mushrooms and courgettes.
Add two tablespoons of smoked paprika, a dash of white pepper, and one tablespoon of cayenne pepper (two if you want it nice and spicy). Stir and coat the vegetables in the spices.
Pour in the chopped tomatoes with a little bit of water and stir. Add the drained kidney beans in and allow to simmer for 20-25 minutes.
Squeeze in some lime juice and add some chopped coriander. Check the flavour and adjust with spices if necessary.
Finally, add some sweetcorn and spinach into the chilli - this should only need a couple of minutes to cook. Serve with rice and cheese.
