Chicken Fajitas

Fajitas are the perfect meal for when you have guests over! They're fun and are so easily customisable that it can easily cater to everybody's individual tastes and preferences. You can cool it down with an extra dollop of sour cream or heat it up by adding some jalepenos. And if you're a little bored of chicken, you can easily sub it out for your preferred meat or fish or add some more vegetables if you want a vegetarian or vegan option.


This can easily serve up to 4 people (roughly two per person), and for any students checking this recipe out, you'll have dinner for days - perfect for when your plate is too full to be cooking something new for every meal.



Ingredients:

Fajita Mix:

2 Chicken Breasts

3 Bell Peppers (I used green, yellow and red because I like a mix)

2 Red Onions

2 Limes

2tbsp Smoked Paprika *

2tbsp Ground Cumin

2tsp Cayenne Pepper

Sea Salt, Black Pepper, and White Pepper (to taste)


To Serve:

Tortillas

Salsa

Guacamole (check out my homemade guacamole recipe)

Sour Cream


* Refrain from using "Hot Paprika", for it is mixed with cayenne pepper already. It is better to get these spices separately as it allows for better control over how hot the dish is.


Method:

  • Dice your chicken breasts into small, bitesize chunks. Julienne your red onions and bell peppers. Put all into a large bowl.

  • Add your seasoning and lime juice into the bowl and mix by hand. If you have time, allow to marinate for as long as possible - but this isn't essential by any means.

  • On a medium heat, add a little olive oil into a stir fry pan. Cook until the chicken is cooked and the peppers have softened. If you find that the peppers aren't cooking through enough, add a lid to your pan and allow to sit on a low heat for five minutes, stirring occasionally to prevent the mixture from sticking to the pan or burning.

  • Once cooked, but still on the heat, taste and adjust the seasonings if need be. The best way to make delicious food is to taste as you go along. If you want it to be spicier, add some more cayenne pepper. If you feel it lacks flavour, add a little more lime juice for some extra tanginess or paprika for an extra little kick.

  • Warm the tortillas through (five minutes in foil in a low heat in the oven or 30-60 seconds on a plate in a microwave) before serving.


Rolling it up!

There's no set way of doing this by any means, but I'm adding this segment in just in case there are any fajita first timers here. Through taste, you'll develop your own preferred way of doing this!

  • Grab a tortilla and smear a thin layer of sour cream across the entire surface.

  • Spoon in some of your delicious fajita mix down the centre of your tortilla and top with a little salsa and guac. You could also add some jalapenos if you just can't resist adding an extra kick!

  • I personally don't like cheese in my fajitas, but if you're a cheese fanatic, feel free to sprinkle some cheese evenly on top of your tortilla mix before wrapping the tortilla.

  • Roll it up! You can leave a little space at one end of the tortilla and fold it on top of the filling before rolling it up to prevent any filling from falling out.
