Healthy Breakfast Ideas

It can be hard to come up with healthy breakfast ideas that you actually look forward to eating. More often than not, you end up fixating on a few, staple breakfast go-tos until you get absolutely sick of them. But within these ideas, I have proposed some tips to help switch up even the smallest of details to your breakfast habits, and hopefully those small changes can make all the difference!

1. Granola, Yogurt, and Berries
Loaded with fibre, granola is a perfect way to start your day. And you will often find you will need a lot less than you think, so start off easy with your portion sizes! I simply add yogurt (my current favourite is Alpro plain with coconut)*, sprinkle a handful of my favoured granola on top (my current favourite is Jordans' Simply Granola with a hint of honey) and top with berries. Sometimes I add a little honey on top, but you could easily use Agave nectar as a vegan alternative.
* This is a dairy free yogurt. Feel free to use a low fat Greek yogurt if you aren't dairy free. Try Skyr if you are trying to include more ingredients with high protein.

2. Breakfast Bruschetta
One of my major tips for keeping breakfast interesting is switching up the bread you use. Opting for a sourdough loaf or ciabatta bread offers a different flavour and texture to something we usually reach for every morning when we don't have a lot of time to prepare breakfast. My breakfast bruschetta is inspired by the Italian starter, bruschetta, which is usually served on ciabatta bread. I lightly toast two slices and rub the surface with garlic. I then smash half an avocado on top, squeeze a little lemon juice, and top with diced organic tomatoes. I then season with sea salt and cracked black pepper, but sometimes I add dried red chilli flakes on top too.

3. Poached Eggs*, Smoked Salmon and Spinach on Sourdough Toast
As mentioned above, one of my favourite ways to keep breakfast interesting is by switching up the bread I use. This recipe uses sourdough toast which has a distinctly, as the name indicates, sour taste which distinguishes it from other breads. I lightly toast one slice, as this is a heavier breakfast idea, and top with spinach (to save time, I steam my spinach over the same pot I poach the egg(s) in). I squeeze a little lemon juice and season with sea salt and cracked black pepper before layering with smoked salmon. Once again, I season and squeeze with lemon juice before adding the poached egg and seasoning once more. I gently slice the yolk open.
* Switching up the ways in which you cook your eggs in the morning is another way of keeping breakfast interesting. Sometimes I will have an omelette with diced peppers, mushrooms, onions, and chilli flakes. Other times I will have a similar dish as above, only scrambling the eggs instead.
