Sweet Potato Fries

My wonderfully spiced sweet potato fries works as an amazing, healthy side dish or even as a snack! They go great with my turkey burger recipe, and with my chicken burger recipe that I'll be posting up within the next few weeks - so be sure to give those a try too!
Method:

Preheat your oven to 220°C or Gas Mark 7.
Peel your sweet potatoes and cut them lengthways to a width and thickness of at least 1 cm to ensure that the fries will cook evenly. It doesn't matter if the lengths are uneven, but if you wish to make them look more uniform you can cut them down to a similar size.
Line a flat baking tray with foil and light cooking spray.
You can either toss the fries into a sandwich bag in order to evenly coat them with seasoning, or massage it into the fries using your hands directly onto the oven tray - it's up to you! I tend to do the latter.
Add a drizzle of olive oil and sprinkle some smoked paprika, white pepper, and sea salt evenly over the uncooked fries. If you like a little kick, then add some cayenne pepper too. For extra crispiness, add a little cornstarch or plain flower evenly across the fries and rub! (Or, if you use the first method, shake until evenly coated).*
Empty the bag onto the oven tray if you have used the first method, and ensure the fries are spread evenly. Bake for half an hour, taking them out halfway to turn them. If they still look like they need a little more crisping up, then leave them in for longer.

* Sometimes I make these with an Indian spice mix. So feel free to follow these steps if you fancy something different! Coat the fries in a little masala powder, lemon juice, and chilli powder. Make sure you add some plain flour or cornstarch to draw out the moisture added by the lemon juice. Bake as normal but take extra care to ensure they crisp up.
